Simple Bread - Chapati

Skillet bread of the year. Can’t get any simpler. I mean why bother. If it’s good enough for millions of Indians, it’s good enough for me. Graham (whole wheat or whatever) flour, wheat flour, salt, water, oil. And that is still in its most complex variations. Plus the kneading of course, feels like you’re actually doing something. I really like skillet bread. And I really like it when I have the time and peace of mind to do something really basic and quaint.

4 dl whole wheat
4 dl plain wheat
2 tablespoons of oil
3 dl (warm) water
a teaspoon of so worth of salt

Knead. Let rest for at least 30min. Knead again. Makes 16 Chapati. The Chapati is ready when air bubbles start to form. The pro version apparently involves post-baking and ballooning over a gas flame.
